Kefir Ranch Dressing and Roast Beef Wraps

Wardeh at Gnowfglins is hosting a Sandwich Round-Up.  Since we are coming up on warm weather and the need for quick, low-heat meals, I wanted to participate and encourage you all to check out all the sandwiches at her website.  I think we will come away with some great ideas for summer lunches.

My contribution to the Sandwich Round-up includes 2 parts.  The first recipe is for Kefir Ranch Dressing that is so good for you and absolutely delicious and easy.  The second recipe uses the Kefir Ranch Dressing to create a Roast Beef Wrap.

Kefir Ranch Dressing

This recipe is so quick an easy, you won’t believe it.  It is thick and ready to serve immediately, although the flavors mingle and marry a little if you have time for it to refrigerate a bit.  It will stay good in the refrigerator for at least 2 weeks, but mine never lasts that long.

Combine the following:

1 cup kefir (not too sour is best or it tastes a little lemony – good, but not exactly like ranch dressing)
1 cup cultured mayonnaise
1/2-1 teaspoon salt (adjust to your taste)
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon dried dill
1/4 teaspoon black pepper

Whisk it well and refrigerate or serve.

Your kids will never know the difference and you won’t feel bad about them dipping everything in your healthy Kefir Ranch Dressing.  It is also delicious in the following Roast Beef Wrap:

Roast Beef Wraps

Mix:

1 cup yogurt cheese or cream cheese or homemade soft cheese with
3-4 tablespoons Kefir Ranch Dressing (or more – adjust to make this spreadable and to your taste – don’t eat it all before you make your sandwiches : ).

Spread this over flour tortillas – you might try these sourdough tortillas.  They are incredibly healthy and easy and soooo much cheaper than the marginal tortillas that you can buy in the store.  They are soft and easily rolled for these wraps.

Shred the following to make a broccoli slaw.  Just use what you have – I never measure really – just a nice colorful shredded slaw.

broccoli with stems
carrots
cauliflower
onion (I use just a little for a bit of flavor)

Mix the slaw with enough kefir ranch dressing to moisten and according to your taste.

Pile a bit of your slaw on your tortillas that has been spread with the cheese mixture.

Top with chopped or finely sliced roast beef.  Roll it up.  Refrigerate until lunch or eat them immediately.  I wish I had pictures, but no time this week.  They are as beautiful as they are delicious and they are absolutely so good for you.  My kids really love them.
